In honor of the official NFL season kicking off this week (already?!), I thought I would share with you my very own chili recipe for your tailgate party. Of course, you can always just make a pot to curl up with as comfort food, too. :o)
Ingredients
1 tbs olive oil
1 red onion
½ yellow onion
2 cloves garlic, minced
1 lb grass fed beef
1 can black beans, drained and rinsed
15 oz. can diced tomatoes (do not drain)
6 oz. tomato paste
1 cup chicken broth
1 yellow bell pepper
1 orange bell pepper
1 tbs chili powder
1 tsp cumin
½ tsp garlic powder
½ jalapeño, seeded and diced
4 pre-cooked turkey jalapeño sausages (I find these at Aldi, but any spicy sausage will do)
Start by sautéing the onion in the olive oil in the bottom of a large pot until just tender. Add the ground beef to the same pot and cook until beef is browned and onions are translucent. Drain. Add the garlic and continue to sautee until fragrant, about 2-3 minutes.
Add black beans, diced tomatoes, tomato paste, chicken broth, yellow and orange bell peppers, jalapeño, and spices. Bring to a simmer. Slice the sausages and add to the pot to warm through. Serve right away or refrigerate for up to a week.
