Apple Crumb Cake

They say there’s nothing as American as apple pie.* With the Fourth of July just around the corner, I imagine many of you may be staring down the barrel of one of these sugary confections of patriotic goodness pretty soon. The holidays are a perfect excuse to indulge, right? Well, some people think so. I’ve been moving away from the “cheat meal” mentality because I don’t think it carries a positive connotation. The way that you eat shouldn’t be something that you need or want to “cheat” on, and you shouldn’t need “excuses” to eat things that are satisfying and delicious.

I came up with this low-carb, sugar-free alternative to the traditional dessert, and I promise nothing about it tastes like “diet food”.  I’ve actually been eating it for breakfast, but I think it deserves a spot at your 4th of July festivities! You shouldn’t have to mistreat your body to enjoy your food.

Ingredients for the Dough

1 ½ cups almond flour

½ cup coconut flour

¼ tsp salt

¼ cup sweetener (I used baking truvia)

8 tbs butter, melted

3-4 apples (I used honey crisp)

¼ cup sweetener (I used baking truvia)

1 tsp cinnamon

Instructions

Preheat oven to 375’F.

Combine almond flour, coconut flour, salt, and sweetener for the dough. Melt or soften the butter in a separate bowl, and mix into the dry ingredients until a crumbly dough forms. Press ¾ of the dough into the bottom of a 9×9 inch baking dish. Save the other quarter for the crumble topping.

For the filling, core and cut your apples into slices no thicker than ¼ inch. Toss in a bowl with sweetener until evenly coated.

Layer the coated apples over top of the dough in the baking dish. Sprinkle with cinnamon.

Crumble the remaining dough evenly across the top of the apples.

Bake for 25-30 minutes or until top has started to brown and apples are soft. Cut into nine pieces. Garnish with homemade whipped cream (half a cup of whipping cream and half a teaspoon truvia, whipped until soft peaks form) and cinnamon if desired.

*When I started this post and realized I had no idea why people say that, I did some searching and came across this article which made me laugh out loud. Particularly the bit about “one of the most passionate defenses of pie ever written.” You’re welcome.
